Chocolate Brownie Brittle Cookies

Ingredients

DRY INGREDIENTS:

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 3/4 cup Blossom Golden Brown Sweetener
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup Scratch Chocolate Chips

WET INGREDIENTS:

  • 1/2 cup coconut oil room temperature
  • 1 egg OR vegan options: 1 flax egg OR 1/4c applesauce
  • 1 tsp vanilla extract

Directions

  • Preheat oven to 350°. Prep baking sheet with either oil, or parchment paper, or silicone baking mat.
  • Mix together coconut oil, egg, vanilla, and Blossom Sweetener.
  • Add almond flour, salt, and baking soda. Mix thoroughly until smooth.
  • Fold in chocolate chips.
  • Ball up cookie dough and place on cookie sheet. 1” – 2″ balls bake best.
  • Bake 12-20 minutes depending on desired consistency.

Recipe Notes

Flax Egg Instructions:
Mix 1 tbsp ground flaxseed meal with 3 tbsp water. Let sit for 10 minutes to set.
